1 pound green beans, cut into 1-inch pieces
2 green onions,
finely chopped
2 tablespoons
olive oil
1 tablespoon
white vinegar
˝ teaspoon
granulated sugar
1 clove garlic,
minced
˝ teaspoon salt
˝ teaspoon fresh
ground pepper
2 tablespoons dry
bread crumbs
2 tablespoons
Parmesan cheese
1 tablespoon
butter/margarine, melted
Preheat oven to
350-degrees. Steam or cook green beans in a small amount of water until
crisp-tender. In a small bowl, stir
together the onion, oil, vinegar, sugar, garlic, salt and pepper. Pour over
green beans and toss to coat. Transfer
to a 9 x 9 x 2-inch baking pan coated with cooking spray. In another small bowl, mix together bread
crumbs, cheese and butter/margarine.
Sprinkle over top of beans.
Bake for 20 to 25 minutes until heated through.
Yield: 4 servings.
