Three Flour Bread

2     packages active dry yeast

1-½ cups whole wheat flour

½    cup rye flour

3     cups all-purpose flour

2     cups milk

½    cup brown sugar

3     tablespoons butter, softened

2     tablespoons granulated sugar

1     teaspoon salt

 

Combine yeast, whole wheat flour, rye flour and 1 cup of all-purpose flour in a large mixer bowl.  Heat together milk, brown sugar, butter, granulated sugar and salt just till warm.  Add to dry mixture.  Using a dough hook, beat at low speed with an electric mixer for 1 minute, scraping bowl constantly.  Beat 3 minutes at medium speed.  Stir in enough of the remaining all-purpose flour to make moderately stiff dough.  Turn out onto floured surface and knead 8 to 10 minutes. 

Place in greased bowl, turning once.  Cover and let rise till double.  Punch down and let rest 10 minutes. 

Preheat oven to 375-degrees.  Shape into loaves and place in 2 loaf pans coated with cooking spray.  Let rise till double, about 45 to 60 minutes. Bake for 40 to 50 minutes.

Yield:  2 loaves.
