Three Grain Muffins

 

Sarah’s “Lite” Recipes

1/2  cup rye flour

1/2  cup whole wheat flour

1     cup all-purpose flour

1     teaspoon baking powder

1/2  teaspoon baking soda

1     cup 2% milk

1     large egg

6     tablespoons Canola oil

 

Preheat oven to 400-degrees.  In a bowl, stir together the flours, baking powder, and baking soda.   In another bowl, combine the milk, egg, and oil.    Add wet ingredients to dry ingredients.  Place liners in muffin cups and fill two-thirds full.  Bake for 15-18 minutes or until a toothpick inserted in center comes out clean.   Cool on wire rack.

Yield:  12 muffins.
