Tomato Salad

 

Sarah’s “Lite” Recipes

 

4   medium tomatoes, sliced

1   cucumber, partially peeled and sliced

1   small sweet yellow onion, peeled and cut into separated rings

     Fresh basil leaves

     Sweet vinegar and olive oil dressing

     Salt and fresh ground pepper

 

Place all ingredients in a shallow serving dish.  Drizzle with dressing.  Cover with plastic wrap and refrigerate for at least 1 hour.  Season to taste!

Yield:  4 servings.
