Tomato Salad/Basil

6   Roma Tomatoes, sliced

1   cucumber, partially peeled and sliced

½  fresh Basil leaves, cut into thin pieces

     Sweet vinegar and olive oil dressing

     Salt and fresh ground pepper

 

Place sliced tomatoes and cucumbers on a large chilled platter.  Spread basil leaves over.  Season to taste.

Yield:  4 servings.

 

*Harvest and preparation of Basil – For fresh use, harvest leaves as they mature.  Cut early in the morning, just after the dew has evaporated and before the sun is hot.  Discard tough stems.  Place leaves in a colander and rinse under cold running water.  Pat dry with paper towels.  Stack several leaves together and cut with a sharp knife.
