Tunnel
of Cheese Muffins
For a Rise and Shine
breakfast, stir up a batch of muffins.
Add a surprise inside by placing a cube of cheese between layers of
batter. The bacon can be prepared ahead
of time and stored in a covered container in the refrigerator. The "quick" muffin is an American
development from the 19th century. It is
made possible by the invention of baking powder, a leavening agent which makes
the product rise when mixed with a liquid and baked. Always clean up as you cook.
Recipe
2 cups all-purpose baking mix
6 slices bacon, crisply cooked
and crumbled
3/4 cup milk
1 large egg
12 1/2-inch
Cheddar cheese cubes
Preheat oven to 400-degrees. Whisk
together milk and egg. Stir together baking mix and bacon. Add to liquid ingredients and stir to mix. Spoon half of batter into 12 muffin cups,
sprayed with canola oil. Press one
cheese cube in each cup. Top with
remaining batter, covering cheese completely.
Bake for 25 minutes or until a pick inserted in center comes out
clean. Serve hot with a plate of
scrambled eggs.
Yield: 12 muffins.
