Turkey Pita

 

Quick and Easy

4   whole-wheat pitas

½  cup spinach, washed and dried

½  cup cucumbers, thinly sliced

½  cup red bell peppers, julienne

2   Roma tomatoes, thinly sliced

½  pound roasted turkey breast

¼  cup fat-free ranch dressing

  

Split pitas along edge to form pockets.  Divide ingredients into fourths. Layer spinach, cucumbers, pepper strips, alfalfa sprouts and tomato slices in pocket.  Fill with shaved turkey and drizzle ranch dressing over. 

Yield:  4 sandwiches.
