Whole Wheat Muffins

 

Country Cooking

 

1   cup all-purpose flour

½  cup whole wheat flour

2   teaspoons baking power

¼  teaspoon salt

1   large egg, beaten

½  cup milk

½  cup honey

¼  cup vegetable oil

 

Preheat oven to 400-degrees.  Sift together flours, baking powder and salt and place in a mixing bowl.  In another mixing bowl, combine egg, milk, honey and oil.  Add liquid ingredients to dry ingredients and stir just until moistened.  Coat muffin cups with cooking spray and fill two-thirds full with batter.  Bake for 18 to 20 minutes or until a toothpick inserted in center comes out clean. Remove muffins from pan and cool on wire rack. 

Yield:  12 muffins.
